Vegan Banana Muffins
I found a recipe online and made it my own. Enjoy!
4 over ripe bananas
1/2 cup raw cane sugar (i'm sure you could sub agave nectar)
2 cups flour
1 tsp baking soda
1 tsp sea salt
1/3 cup coconut oil
1/4 cup shredded unsweetened coconut
1/4 cup wheat germ
1/2 cup chopped walnuts- optional
preheat oven to 350*. In large bowl smash bananas, add oil and sugar and mix. Mix all other ingredients in separate bowl then add to the wet mixture. Stir until blended together. Fill cupcake liners or greased cupcake pan 2/3 full. Bake 20-25 min. or until toothpick comes out clean.
OMGosh these came out so moist and delicious! I will have to make another batch because I don't think these are going to last long:)
