Vegan Recipe- Energy Cookies

I borrowed a cookbook from a friend that has some very yummy recipes in it called Vive le Vegan. The only thing missing from the recipe is the hemp seed nuts, the health store was out. These cookies are so good and won't last long.

Girls Weekend in Anchorage

I got back yesterday from a girl's weekend trip to Anchorage with my best friend Charlie. She is still living in Juneau so we met up in Anchorage for the weekend. It was so much fun seeing her and getting to spend time together. We had a blast! We shopped, got manicures, enjoyed delicious food, did some sightseeing and laughed so much together. I miss her already:( Here are some pictures of us.

Run for Congo Women

I am participating in a 10k on Mother's Day. It is a Run for Congo Women- all money from the race will go to sponsor women in the Congo. I am fundraising for the cause if you are interested in making a donation. Click here
I am currently reading the book A Thousand Sisters written by Lisa Shannon- the woman that started this run. She is planning on coming to Kodiak to participate in the run with us! You can read about the Run for Congo Women here.

Becoming a Certified Birth Doula

I have been training to become a certified birth doula through http://www.childbirthinternational.com/. Currently I am a back up doula for a few moms to be and will be attending a couple births in April. I am really excited to start working with moms and supporting them throughout their labor.
I have been working as an Office Manager for Zoya at A Balanced Approach since September 2010. A Balanced Approach offers physical therapy, fitness classes, doula services and childbirth classes.
I feel really lucky to have such a great birth network here in Kodiak that I can learn so much from. The training I am working on is all self paced and online. I should be completed and certified by the end of this summer:)

Vegan Banana Muffins

I found a recipe online and made it my own. Enjoy!

4 over ripe bananas
1/2 cup raw cane sugar (i'm sure you could sub agave nectar)
2 cups flour
1 tsp baking soda
1 tsp sea salt
1/3 cup coconut oil
1/4 cup shredded unsweetened coconut
1/4 cup wheat germ
1/2 cup chopped walnuts- optional

preheat oven to 350*. In large bowl smash bananas, add oil and sugar and mix. Mix all other ingredients in separate bowl then add to the wet mixture. Stir until blended together. Fill cupcake liners or greased cupcake pan 2/3 full. Bake 20-25 min. or until toothpick comes out clean.

OMGosh these came out so moist and delicious! I will have to make another batch because I don't think these are going to last long:)
